ABOUT Kerala Egg Curry RECIPE

Egg curry made in kerala style, perfect for hot steamed rice or appam.

Ingredients Serving: 2

  1. Boiled eggs 4
  2. Finely Chopped onions 1 cup
  3. Finely chopped tomatoes 1/2 cup
  4. Ginger-garlic paste 1 tsp
  5. Slit green chillies 3 no.s
  6. Curry leaves 12
  7. Mustard seeds 2 tsp
  8. Red chilli powder 2 tsp
  9. Turmeric powder 1 tsp
  10. Coriander powder 2 tsp
  11. Garam masala 1 tsp
  12. Cinnamon sticks 2 small
  13. Fennel seeds 1/2 tsp
  14. Cumin seeds 1/2 tsp
  15. Pepper 1 tsp
  16. Cardamom 3-4
  17. Salt as per taste
  18. Oil 4 tbsp
  19. Coconut milk 1/4th cup
  20. Hot water - 1 cup

Instructions

  1. In a small bowl take 1 & 1/2 tbsp oil. In this put chilli powder, turmeric powder, coriander powder & garam masala.
  2. Dry roast cinnamon. Fennel seeds, cumin seeds, pepper and cardamom on low flame. Let it cool completely and then grind to fine powder.
  3. Mix and make a thick paste. Keep this paste aside.
  4. Now in a kadhai take remaining oil, heat on medium flame.
  5. Add mustard seeds. Once they start to splutter add slit green chillies and curry leaves.
  6. Now add chopped onions and ginger-garlic paste. Saute this well until onions start turning light brown.
  7. Now add tomatoes and saute well. Let the tomatoes turn soft.
  8. Add the spice paste & spice powder into this and mix well.
  9. Add hot water, give a good stir. Put the boiled eggs into the curry. Simmer and cook for 3-4 minutes.
  10. Now add the coconut milk, bring it to boil and the kerala style egg curry is done.
  11. Serve it hot with steamed rice or kerala appam.
