Wash and chop the potatoes and cauliflower. Then blanch the cauliflower pieces in salted water (to get rid of any worms, etc.)
Take a wok and heat oil in it, add the chopped potatoes and cauliflower.
Cover it and cook on a medium flame for about 4-5 minutes or till it comes soft. Stir it in between softly so that the bud does not break.
Turn off the stove and put it on a plate. (Do not overcook this.)
Grind the onion, tomato, green chilli and ginger-garlic together. Keep it aside.
Heat the same wok and add a little oil, then add the hing/ asafoetida and cumin seeds. As it starts crackling, add in the grounded paste and cook for a minute.
Saute it well and add all the dry masalas. Let this cook for a minute.
Pour in a little water so that all the masalas mix properly. Then add in the aloo gobhi, mix it properly but softly.
Cook for a minute, all the masalas should get mixed properly with the vegetables.
Sprinkle kasuri methi on top and serve it.
