ABOUT Chicken Sagwala RECIPE

Chicken sagwala or Spinach Chicken is very popular Punjabi chicken curry, with goodness of chicken protein and calcium and folate of spinach. Good for all ages .

Ingredients Serving: 4

  1. Chicken 1/2 kilograms
  2. Spinach leaves 250 grams
  3. Oil 3-4 tablespoons ( preferably Mustard oil)
  4. Thick curd 1 cup
  5. Cloves 5-8
  6. Black pepper corns 10-12
  7. Crushed garlic 2 teaspoons
  8. Crushed ginger 2 teaspoons
  9. Finely chopped onion 2
  10. Slit green chillies 2-4
  11. Cumin seeds 1 teaspoon
  12. Whole coriander seeds 2 teaspoons
  13. Cinnamon sticks 1
  14. Green cardamom 1
  15. Turmeric powder 1/2 teaspoon
  16. Chicken masala or Garam masala 1 teaspoon
  17. Finely chopped fresh coriander as per need
  18. Salt to taste

Instructions

  1. Wash chicken in running water . Apply some turmeric powder and salt on washed chicken and keep aside covered for half an hour. Later wash it again thoroughly to remove any dirt .
  2. In a mixing bowl, take Curd , add crushed ginger and garlic, Salt to taste, 1/2 teaspoon of chicken masala , slit green chillies and 1 tablespoon of Mustard oil . Mix well everything and prepare merinade for Curd .
  3. Add washed chicken to merinade ,mix well and keep covered inside fridge for merination.
  4. Take chopped spinach leaves and blanch in hot water for 2 minutes . Later remove from hot water and add some cold water to stop it's further cooking .
  5. Prepare fine puree of blanched spinach in mixer grinder
  6. Now ,heat 2 tablespoons of oil , add cumin seeds, cinnamon stick, whole Red chilli, green cardamom, whole coriander seeds, cloves, black pepper corns and finely chopped onion. Sauté till golden brown and nice aroma starts coming .
  7. Now add merinated chicken to it and mix well
  8. Cook covered on low heat until oil separates.
  9. Now add spinach puree and adjust Salt according to taste. Mix well and cook uncovered
  10. After a while within 5-10 minutes chicken Saagwala is ready to serve . Add chopped fresh coriander .
  11. Garnish as per like and serve hot immediately with chapatis, paratha or steamed rice
  12. Enjoy endlessly .
