Ingredients Serving: 4

  1. Wheat flour 1 cup
  2. Rava/ Semolina 1/2 cup
  3. Maida/Flour 1/2 cup
  4. Besan/ Chickpea flour 1/2 cup
  5. Ragi/ Finger millet flour 1/2 cup
  6. Corn flour 1/2 cup
  7. Sugar 1 cup
  8. Salt as per taste
  9. Oil 2 tbsp
  10. Mustard seeds 2 tsp
  11. Methi/ Fenugreek seeds 1 tsp
  12. Jeera/Cumin seeds 1 tsp
  13. Garlic pods 1 or 2
  14. Curry leaves 2 sprigs
  15. Red Chilles 2
  16. Green Chilli 1, finely chopped
  17. Onion 1 small sized, finely sliced
  18. Coriander leaves

Instructions

  1. Mix all the flours, rava, sugar and salt together. Add the required quantity of water, the batter should be like a idli batter, neither too thin or too thick.
  2. Heat oil in a pan, add the garlic and mustard seeds. Once it splutters, add the jeera, methi seeds and fry for a minute. Then add the red chillies, green chilli, onion and fry until it's golden brown in colour.
  3. Add the flour mixture to this and finally add the fresh coriander leaves.
  4. Heat a nonstick dosa tava, grease it lightly with some oil. Pour a ladleful of batter in it, cover with a lid and cook on a medium heat for a minute. Flip it over and cook for a minute on the other side too.
  5. Serve it with any sauce.
