ABOUT Kashmiri Roth RECIPE

This is a type of traditional flavourful Kashmiri sacred cookies which are prepared by Kashmiri pundits at the time of 'Punn deun'. In this day they wake up early in the morning and make these cookies in separate utensils which are not used during other times. These utensils are only used during Punn deun and the cookies are offered to the godess of Harvest.

Ingredients Serving: 3

  1. Whole wheat flour-2 cups
  2. 1/2 cup Sugar
  3. 4 tsp ghee for making khasta
  4. 1/4 tsp salt ( optional)
  5. 1/2 tsp black cardamom powder
  6. Some splitted almonds and cashew nuts
  7. 2 tsp curd
  8. 1 tsp sugar for sprinkling
  9. 1 tsp poppy seeds for sprinkling
  10. 1 tsp sugar powder for garnishing
  11. 1 tsp chopped pistachios for garnishing
  12. Ghee for dip frying
  13. Water for making dough

Instructions

  1. In a bowl take wheat flour, ghee,black cardamom powder,sugar and salt.
  2. Then mash it well.
  3. Then add water in it.
  4. Make the dough.
  5. Make equal parts of the dough and press with your hand to make cookies like shape.
  6. Beat the curd and brush it on cookies.
  7. Brush the curd over all the cookies.
  8. Press the cashew nuts and almonds on it.
  9. Sprinkle sugar on them.
  10. Then sprinkle poppy seeds on them.
  11. Heat a pan and add ghee in it.
  12. Then dip fry the flattened cookies in it in low flame .
  13. Fry them till they becomes golden brown in colour.
  14. Fry all the cookies.
  15. After cooling down sprinkle sugar powder in it.
  16. Then garnish with some pistachios and now the kashmiri roth are ready.
