ABOUT Green Peas and mint soup RECIPE

I have a lot of kids in my neighbourhood and all the mothers including myself have a constant worry of making them eat the seasonal vegetables and fruits. This time, inspired from a buffet menu in a restaurant that I visited for a conference, I made a soup out of green peas and mint, with of course the changes in ingredients to suite our little taste buds and palates. A bowl full of goodness of whole milk, fresh peas and mint is sure to be loved by kids for their break time during play on a winter morning and serves a good appetizer for adult lunch too. Thickness of soup can be adjusted as per your choice and if you dont prefer having mint leaves in between, the can be pureed with peas.

Ingredients Serving: 4

  1. Fresh green peas 1 and 1/2 cup ( can take frozen too)
  2. Mint leaves 1/2 cup
  3. Shallots 4-5
  4. Butter/Ghee 1 tablespoon
  5. Cinnamon Stick 1
  6. Peppercorn 5
  7. Bay leaf 1 small
  8. fennel seeds 1 teaspoon
  9. Garlic paste 1 teaspoon
  10. Green chilly 1
  11. Milk 1/2 cup
  12. Water/ vegetable/ chicken stock 2 cups
  13. Salt to taste
  14. Sugar for seasoning
  15. Pepper powder 1/2 teaspoon

Instructions

  1. Wash green peas
  2. Take mint leaves
  3. Cut shallots in fine pieces
  4. Heat ghee in pan
  5. Add cinnamon, peppercorn, bay leaf
  6. Add cumin seeds and fennel seeds
  7. Add green chilly and garlic
  8. Add cut shallots and saute
  9. Add green peas
  10. Add a little water or stock
  11. Cover and let peas get cooked for 5-8 minutes
  12. Once the peas get soft, let them cool a bit before we puree them
  13. Transfer them to mixer grinder. Remove cinnamon stick, bay leaf and chilly before grinding.
  14. Puree the peas to a fine paste
  15. Now heat the same soup pan and add green peas puree with water and milk
  16. Mix and add finely cut mint leaves
  17. Add pepper powder
  18. Season with salt and little sugar
  19. Let it boil for 5 minutes
  20. Serve in a soup bowl
