ABOUT Egg Mice with Hummus RECIPE

Ingredients Serving: 6

  1. 6 hard cooked eggs peeled and halved
  2. 6 tsp low-fat mayonnaise
  3. half tsp salt
  4. two carrots thinly sliced
  5. 10 black grapes
  6. 3 ounce cheddar cheese cubed
  7. spinach or lettuce leaves(7-8)
  8. For hummus-
  9. hundred gram chickpeas
  10. 2 tbsp sesame seeds
  11. 2 tsp olive oil
  12. 2 tsp lemon juice
  13. 2-3 garlic cloves
  14. ¼ tsp chilli flakes

Instructions

  1. wash chickpeas and Soak in the water for 6 to 8 hours
  2. boil chickpeas in the pressure cooker until softened and tender
  3. heat up a Pan and Roast sesame seeds until golden brown
  4. Now in a Blender blend cooled chickpeas ,sesame seeds, chopped garlic , lemon juice,salt and pepper
  5. gently Scoop egg yolks in the in a bowl
  6. Mash Yolks Mayonnaise and salt until smooth
  7. spoon yolks mixture back into the egg halves
  8. place the hummus and then 2 halves cut side down on the serving(on top of spinach leaves )
  9. Cut two tiny slits near the narrow end of each half: carrot slices into each half for ears
  10. use the root end of carrot for the tail and black grapes for eyes
  11. before placing egg halves on the Hummus Sprinkle Chilli flakes and olive oil on the Hummus
