Ingredients Serving: 5

  1. 200 grams Paneer / Cottage cheese
  2. 1 handful of cashewnut in halves
  3. 2 tomatoes roughly chopped
  4. 1 onion roughly chopped
  5. 2 teaspoon garlic paste
  6. 1 teaspoon ginger paste
  7. 1 teaspoon chilli paste
  8. 1 teaspoon cumin seeds
  9. 1 inch cinnamon stick
  10. 2 green cardamom
  11. 2 cloves
  12. 1 black cardamom
  13. 5-6 black pepper pods
  14. 1/2 teaspoon salt
  15. Crushed dried fenugreek leaves
  16. 1 tablespoon butter
  17. 1 tablespoon Cream
  18. 1/2 tablespoon kashmiri red chilli powder
  19. 1/2 tablespoon egg-curry masala
  20. 1 Dry red chilli
  21. 1 teaspoon sugar or gud (optional)
  22. 2 tablespoons Oil or ghee for cooking
  23. Some broken cashews for making puree

Instructions

  1. Soak cashews in warm water for atleast 30-40 minutes.
  2. In a pan heat oil and add all the dry spices like cumin, cinnamon, red chilli pepper pods, green and black cardamom
  3. In the oil add onion garlic ginger paste and saute till well cooked. I pureed them together in the mixer. Then add Kashmiri chilli powder and fry.
  4. In a mixer add tomatoes, green chilli, 4-5 broken cashews and puree to fine paste
  5. I puteed to this consistency as shown in the pic
  6. This is the roasted onion with chilli powder.
  7. Add tomato puree and saute. Add other masalas except salt.
  8. Saute till oil starts to separate.
  9. Now add crushed kasuri methi or dried fenugreek leaves and roast.
  10. Add water as thick or loose you like your gravy to be
  11. Now add cashews and salt and cook covered for 5 minutes.
  12. Lower the flame add cream
  13. Next add butter
  14. Add the paneer cubes
  15. I usually cut heart, flower or star shapes of the paneer, for my little guests, they love the little surprise when they dip into the yummy and rich gravy
