Balsamic Honey poached Pears with Mascarpone cheese

Ingredients Serving: 3

  1. 3 firm ripe pears
  2. 1 cup honey
  3. 1/2 cup balsamic vinegar
  4. 1/2 cup apple juice
  5. 1 tbsp lemon juice
  6. 2 tbsp butter
  7. 3 cinnamon sticks
  8. 3 Star Anise
  9. 1 tsp vanilla essence

Instructions

  1. Peel and core the pears from bottom without cutting halves.
  2. In a deep saucepan pour balsamic vinegar, apple juice, honey and add lemon juice vanilla essence, butter, cinnamon sticks and star anise.
  3. Bring the sauce to boil. When it starts boiling reduce the flame low and add the peeled and cored pears and cover with the lid. Pears must be completely submerged in the sauce.
  4. Occasionally gently stir and flip the pears so that it is poached evenly.
  5. Let the pears poach for 20 minutes on low heat.
  6. After 20 minutes remove the pears from the sauce and keep it aside.
  7. Now increase the heat and cook the sauce to make it thick.
  8. When the sauce is reduced to half the quantity and turned syrupy remove from the heat.
  9. Return the poached pears in the sauce and let them cool down before serving
  10. For serving place the pears on to the serving plate drizzle with sweet and tart, honey balsamic sauce on top and on side serve mascarpone cheese.
