This pudding is unbelievably good. You can store for a long time and serve for any celebration.

Ingredients Serving: 10

  1. 1 /2 cup flour
  2. 1/2 cup breadcrumb
  3. 1 cup butter
  4. 3 eggs
  5. 1/2 tsp lemon rind
  6. A pinch of salt
  7. 1/4 tsp nutmeg powder
  8. 1/2 tsp cinnamon powder
  9. 1/4 tsp mace powder
  10. 2 tbsp dark rum
  11. 2 tbsp whisky
  12. 1/4 cup chopped prunes
  13. 1/4 cup finely chopped candied peels
  14. 1/2 cup orange juice
  15. 1/4 cup blanched , peeled and chopped almonds
  16. 1/4 cup cherries
  17. 1/4 cup tutti - fruity
  18. 1/2 cup black currants
  19. 1/2 cup brown sugar
  20. 1/2 cup grated carrot
  21. 1/2 cup raisins
  22. 1 tbsp icing sugar for sprinkling
  23. Strawberries a few

Instructions

  1. Preheat oven to 180 degree centigrade. Grease and dust a pudding mould.
  2. Sieve flour with salt, cinnamon, nutmeg and mace powder into a bowl. Add the breadcrumbs.
  3. Soak prunes, almonds, cherries, tutti fruity, raisins, in a mixture of rum and whisky.
  4. Add butter, carrot, brown sugar, black currants and candied peels to the sieved flour mixture and blend it well with an electric blender.
  5. Add each egg and blend well. Add orange juice, lemon rind, soaked nuts along with the alcohol and blend again. Add remaining egg and blend well.
  6. Pour the mixture into the greased mould and cover with an aluminium foil.
  7. Place a baking tray in the oven and fill half of it with water.
  8. Place the mould on the top and bake it for an hour at 180 degree centigrade.
  9. Cool it and de mould and sprinkle icing sugar on top. Decorate with strawberrys or any other item and serve.
