Ingredients Serving: 4
FOR KADI....
oil 4 tbsp
besan 4 tablespoon
think one fourth teaspoon
jeera 1 teaspoon
Methi seeds one teaspoon
2 drumsticks
8 ladies finger(bhindi)
Few peas
one potato chopped into chunks
3 to4 green chillies slit
1 tomato chopped into chunks
one small brinjal chopped
Few florets of cauliflower
salt to taste
8 pieces of cluster beans
1 teaspoon red chili powder
FOR HOMEMADE MAWA GULAB JAMUN
100 grams of mawa
1 tablespoon of maida
1/4 teaspoon of soda bicarb
Pinch of ellachi powder
10 strands of Kesar
2 cups of sugar
2 cups of water
FOR GOBHI AALU
half kg cauliflower
two potatoes
two tomatoes finely chopped
4 to 5 green chillies
salt to taste
jeera 1 teaspoon
oil to Deep fry
turmeric powder 1 teaspoon
red chilli powder 1 teaspoon
2 teaspoon coriander powder
garam masala powder 1 teaspoon
coriander leaves to garnish
Instructions
For kadi...
heat oil in heavy bottomed pan
add jeera and Methi seeds
add besan and start cooking on medium flame
Cook tilll Aroma is spread all over and the besan has become golden brown
Now add 2 glasses of hot water
Add salt, red chilli powder, turmeric pwd and mix.
Let it boil then add all veggies one by one.( harder ones like potatoes ,cauliflower,drumsticks first then after 10 mins add softer ones like brinjal,tomatoes, lady fingers.)
Let all the veggies cook .
At this stage add half glass more water and 4 tbsp imli pulp.
Give tadka of zeera and red chilli powder.
Ur SINDHI curry is ready to serve with hot steamed ghee rice.
FOR HOMEMADE GULAB JAMUNS
Mash mawa with the palms of ur hand till u will soft consistency and little ghee like substance feels on ur hands.
Now add Maida and soda no carb and make small balls of it.
There shouldn't be any cracks.
Next prepare sugar syrup of one thread by mixing sugar,water,cardamom pwd,kesar strands.
deep fry balls on low flame till light brown
Soak this balls in warm sugar syrup for 2 hours
And serve these soft baby gulab JAMUNS.
FOR GOBHI AALU
Cut gobhi and aalu
Deep fry them in hot oil till golden with some salt.
Add slit green chillies
Now in another kadai add 2 tbsp oil.
Add tomatoes and cook them till soft and mushy
Once tomatoes are cooked add fried gobhi and aalu.
Add in haldi,dhaniya,mirchi pwd,and cook on high flame.
Then at the end add some garam masala and coriander leaves.
