This type of lunch you can make when you are in so hurry and have no time to make any other dishes. Can be prepared within few minutes and is so healthy and tasty also.

Ingredients Serving: 3

  1. Ingredients for dalma:
  2. Roasted moong dal-1/2 cup
  3. Potato-1 medium sized
  4. Chopped brinjal,pumpkin, raw papaya,beans,carrots,arum-3 cups
  5. Tomato - 1 chopped
  6. Ghee-2 tsp
  7. Water-4 cups
  8. Turmeric powder-1/2 tsp
  9. Salt as per taste
  10. Onion -1 chopped
  11. Punch photon-3/4 tsp
  12. Chopped coriander leaves
  13. Some curry leaves
  14. Dry red chilli-2
  15. A pinch of hing
  16. Sugar-1/2 tsp
  17. For baigan bhaja:
  18. Brinjal- 1 big size
  19. Rice flour-2-3tsp
  20. Ginger,garlic,green chilli paste-1/2 tsp
  21. Turmeric powder-1/4 tsp
  22. Chilli powder-1/2 tsp
  23. Salt as per taste
  24. Mustard oil-2 tsp
  25. For Dhania parts chutney:
  26. Chopped coriander leaves-1 cup
  27. Tamarind juice-1/4 cup
  28. Sugar-1 tsp
  29. Salt as per taste
  30. Ginger-1/2 inch
  31. Garlic-5-6 cloves
  32. Green chilli-2

Instructions

  1. For dalma: Heat a pressure cooker and put water in it and allow it to boil.
  2. Add day,all chopped vegetables, turmeric powder, salt in it and cover the lid till one whistle.
  3. For tampering heat another pan and put ghee in it and add the hing,punch photon in it and when the mustard in the punch photon crackle then add curry leaves and chopped onion in it and saute it till the onions become golden brown in colour and then mix the boiled dal and vegetables in it and allow it to boil and mix the sugar and coriander leaves and switch off the flame.
  4. Now your dalma is ready now.
  5. For baigan bhaja: Slice the brinjal.
  6. Mix all the ingredients together except the oil along with little water to make a batter.
  7. Then dip the slices of brinjal in it .In a pan spread oil in it and fry the brinjal slices till golden brown in both the sides in medium flame. Now the baigan bhaja is now ready.
  8. For dhania patra chutney( coriander leaves chutney): Grind all the ingredients to make the chutney.
  9. Serve the lunch hot with a spoon of ghee on the rice and as well as some lemon and onion slices.
