Ingredients Serving: 4

  1. Semolina 1 cup
  2. Clarified butter/ghee 1/2 cup
  3. Sugar 1/2 cup
  4. Green cardamom powder 2 pinches
  5. Milk + Water 2 1/2 cups
  6. A pinch of green food color
  7. A pinch of turmeric
  8. Mango pulp (fresh/frozen) 1 tablespoon
  9. Blanched and peeled almonds for garnishing

Instructions

  1. Pour ghee in a pan and heat, add the semolina.
  2. Roast the semolina till a nice fragrance emanates. Yet the color should not change much.
  3. Add the sugar and slowly start adding the milk water solution.
  4. Keep stirring so that lumps should not be formed.
  5. The Sheera/halwa will be ready in a minute. Turn off the gas and divide the halwa in 3 parts.
  6. Keep one part as it is. In the second part add the mango pulp and a pinch of turmeric. In the third part, add green food color.
  7. Now in a mould or a small bowl put orange colored halva and press with the back of the spoon, then add the simple halwa again. Press and lastly add the green coloured halva and press.
  8. After a minute de mould the halva on a serving plate and serve garnished with almonds.
