ABOUT Jamnagar special Ghuto RECIPE

This is a winter special vegetable made in villages near Jamnagar when the greens are available easily.Traditionally it is cooked over a wooden stove in the farmhouse.Zero oil vegetable dish tastes best when eaten with bajra rotla and accompanied by green onion,garlic chutney,buttermilk,ghee jaggery and fried green chillies.

Ingredients Serving: 4

  1. Fenugreek leaves 1 cup
  2. Dill leaves 1 cup
  3. Raddish leaves 1 cup
  4. Spinach 1 cup
  5. Amaranth leaves 1 cup
  6. Green pigeon peas(tuver) 3/4 cup
  7. Green chick peas(chana) 3/4 cup
  8. Flat beans seeds(val papdi) 3/4 cup
  9. Green garlic 50 gms
  10. Brinjal 2 medium
  11. Sponge gourd 2
  12. Potato 1 big
  13. Tomatoes 3
  14. Ginger 1 inch
  15. Green chillies 2
  16. Salt
  17. Lemon juice 1 tsp

Instructions

  1. First wash and chop all the leafy vegetables.
  2. Remove seeds of broad beans,pigeon peas and chickpeas.
  3. Add ginger,chilli and white part of green garlic in mixer.Grind to paste.
  4. Take 2 cups water in a cooker.
  5. Add the seeds first.
  6. Now add chopped brinjals,sponge gourd and potatoes.
  7. Then add all leafy vegetables one by one.
  8. Add chopped tomatoes.Also add crushed ginger chilli and garlic paste.
  9. Add the green part of garlic too.
  10. Add salt and close the cooker.Take 3-4 whistles.
  11. Let the pressure release.The vegetables will be cooked.
  12. Now with a wooden churning stick(mathani) stir the cooked vegetables.You can also coarsely blend with electric blender.
  13. Add lemon juice and our ghuto is ready.Serve with bajra rotlas ,ghee jaggery,fried green chillies,garlic chutney.
  14. Ideally the rotla is crushed coarsely with hands and then ghuto is poured over it.Add a dash of spicy garlic chutney and mix.Enjoy.
