it is quite easy and simple to make this mouth watering, delicious ghughras. street food of jamnagar (gujrat).it's a roadside snack and very famous in gujrat .

Ingredients Serving: 6

  1. 2 cup all purpose flour
  2. Salt to taste
  3. 4 tsp oil
  4. Water as required
  5. For stuffing
  6. 3 to 5potatoes, boiled
  7. 1 cup green peas, boiled or frozen
  8. 1 tbsp ginger chilli paste
  9. Salt to taste
  10. 1 tsp garam masala
  11. 2 tsp Lemon juice
  12. Oil for Deep frying
  13. 2 tbsp green chutney
  14. 1 tbsp garlic chutney
  15. 2 tbsp dates tamarind chutney
  16. 1 tbsp onions, finely chopped
  17. 2-3 tbsp masala peanuts
  18. 2-3 tbsp sev
  19. 2 tbsp coriander leaves, finely chopped

Instructions

  1. for dough take a bowl, and add all purpose flour.
  2. add salt to taste, and oil
  3. crumble the flour.then add water as required
  4. prepare dough
  5. cover the dough and let it rest for 20 minutes.
  6. for stuffing take boiled potatoes in a mixing bowl and mash well
  7. then add green peas, ginger chilli paste, garam masala, salt to taste and lemon juice.
  8. mix well, keep aside
  9. first of all, take the dough and knead it for a minute
  10. then divide it into equal parts.
  11. take one dough ball & flatten a bit
  12. then roll it into big medium thick roti.
  13. cut it round using dish.
  14. fill a tea spoon of stuffing on one side.
  15. fold the sides to make half moon shape.
  16. then fold and press sides to get perfect shape
  17. deep fry ghughra on a medium flame.
  18. deep fry till they turn golden brown and crispy
  19. take on a kitchen towel so it absorbs excess oil.
  20. take ghughra in a serving plate and make hole in between.
  21. add green chutney, garlic chutney and dates tamarind chutney
  22. then sprinkle some finely chopped onions, masala peanuts and sev.
  23. finally, sprinkle some coriander leaves and serve
