Ingredients Serving: 4

  1. 3 potatoes chopped in big cubes
  2. 1 cup cauliflower chopped in big size
  3. 1 capsicum chopped in big cubes
  4. 1 cup green peas
  5. 2 cup spinach puree
  6. 2 green tomato finely chopped
  7. 1 cup green onion leaves finely chopped
  8. 2 onion finely chopped
  9. 1-1/2 spoon ginger garlic paste
  10. 1 cup water
  11. 2 spoon clarified butter
  12. 4 spoon amul butter
  13. 2 spoon pavbhaji masala
  14. Salt as per taste
  15. 1/4 spoon turmeric powder
  16. 1/2 spoon red chilli powder
  17. 3/4 cup lemon juice
  18. 8 pav
  19. Onion and lemon slices for serving

Instructions

  1. Put potatoes,cauliflower,capsicum,peas,salt and turmeric powder in a cooker
  2. Add water and cook for 3-4 whistles
  3. Mash cooked veggies with a masher
  4. Heat clarified butter in a wok and saute onion and ginger garlic paste
  5. Add tomatoes and cook for 3-4 minutes
  6. Add green onion leaves and saute for 2 minutes
  7. Mash with a masher
  8. Add both spices and cook for 2 minutes
  9. Add spinach puree and cook for 3-4 minutes
  10. Add boiled veggies and cook until it thickens
  11. Mash properly
  12. Switch off the flame after adding lemon juice and butter
  13. Cut pav from middle and roast from both sides by applying butter
  14. Serve green pavbhaji with lemon and onion slices.
