Smoked Salad with Honey Chilli Dressing

ABOUT Smoked Salad with Honey Chilli Dressing RECIPE

I love healthy eats and this salad not only serves that purpose but is great during monsoon and winters. Pair it with nice toasted bread and a dollop of cheese spread and you and your guests will just love it.

Ingredients Serving: 2

  1. Broccoli florets 1 cup
  2. Asparagus stalks 8-10
  3. Carrot 1 cut into thick chunks
  4. 8 button mushrooms halved
  5. Half cup green peas
  6. 1 cup paneer cubed
  7. 1 cup mixed bell peppers cut into quarters
  8. 1 onion cut into wedges
  9. 1 tsp each grated ginger and garlic
  10. Salt and pepper as per taste
  11. Honey 1 tbsp
  12. Chilli sauce 1 tbsp
  13. Olive/sesame oil 2 tbsp
  14. Lime Juice 1 tsp
  15. Mixed herbs 1 tsp
  16. Fresh parsley or basil to taste
  17. 1 tsp soya sauce

Instructions

  1. Blanch broccoli, asparagus, peas and carrots. Heat oil in a wok and add ginger and garlic. Add onion and bell peppers. Saute on high flame for a min. Add all other veggies and mix properly and keep it on high flame for 20 seconds and switch off. Take it out in a bowl.
  2. Mean while put a piece of coal on direct flame until it turns red hot. Marinate paneer with salt pepper, a little chilli sauce, olive oil and keep aside for 10 minutes.
  3. Grill paneer on both sides till marks appear, add it to veggies. In a small bottle Mix remaining olive oil, honey, lime juice, chilli sauce, salt and pepper and soya sauce and shake it properly and add it to salad. Mix.

  6. Take a small bowl, place it in a salad bowl. Put the hot coal in the small bowl and pour a tsp of ghee over it and cover the salad bowl tightly with a lid for half a minute and let the smoky flavours incorporate. Open the lid, remove the bowl with coal and discard. Mix the salad. Serve garnished with fresh basil or parsley.
