ABOUT Undhiyu RECIPE

A special Gujarati mixed vegetable made with lots of fresh masala .

Ingredients Serving: 7

  1. For Muthia
  2. Wheat flour 1.5 cup
  3. Besan 1/4 cup
  4. Chopped methi leaves 1.5 cups
  5. Red chilli powder 1 tsp
  6. Haldi powder 1/2
  7. Ginger garlic chilli paste 2 tsp
  8. Dhaniya powder 1.5 tsp
  9. Sugar 1 tsp
  10. Garam masala powder 1/2 tsp
  11. Eating soda 1/2 tsp
  12. Salt to taste.
  13. Oil 2-3 tbsp
  14. For Undhiyu
  15. 250 GMs Surti papdi ( make these into half)
  16. 250 GMs toovar ( remove the seeds)
  17. Small brinjal 6-7 pieces
  18. Small potato 6-7
  19. Raw banana 2 cut into big pieces
  20. Kand 150-200 grams , cut into big pieces
  21. Ingredients for masala
  22. Grated coconut 2 cups
  23. Coriander leaves 3 cups
  24. Fresh garlic ginger green chilli paste 3 tablespoon
  25. Red chilli powder 1 teaspoon
  26. Turmeric pinch
  27. Garam masala powder 1/2 teaspoon
  28. Dhaniya powder 1 tablespoon
  29. Sugar 1 teaspoon

Instructions

  1. 1.For Muthiya
  2. Mix all the items, use water just 2-3 tbsp as we need a hard dough. Make oval shape Muthiah n deep fry them till brown n crisp.
  3. 2.For masala
  4. Grind all the above to make a thick masala, do not add water while grinding..add salt to the masala.
  5. Take a cooker, add oil 4-5 tablespoon , add first layer at bottom of papdi and toovar . Add little masala, keep adding one by one vegetables and masala little by little.
  6. Cut brinjal and potatoes into half and fill the masala it them, place them in the cooker in layers.
  7. Now add some masala and finally add muthiya.
  8. Add 5-6 tablespoon of oil from sides and add 1/2 cup of water.
  9. Cover the cooker and cook for two whistle, and check if all vegetables are done or not, or take more whistle.
