Chaiwala Butter Biscoot (Butter Biscuits)

Ingredients Serving: 3

  1. Butter - 110 grams (1/2 cup)
  2. Sugar (fine crystals) - 65 grams (1/2 cup)
  3. Maida - 165 grams (1 cup)
  4. Salt - 1/8th tsp
  5. vanilla extract - 1/2 tsp
  6. Cling Foil

Instructions

  1. Bring all the ingredients to room temperature. If the sugar granules are big, then pulse them once in a mixer grinder to fine granules. Sift the flour and salt once.
  2. To a bowl add the sugar and the butter and beat well until pale and fluffy. Add the vanilla essence and mix again.
  3. Slowly add in the flour and start mixing. Initially the dough will look dry. But as you mix, the dough will turn pliable.
  4. Take the cling foil and spread it on a table top. Spread the dough over the cling foil and make a log shape. Wrap the dough firmly and refrigerate it for an hour
  5. Meanwhile, pre heat the oven to 200 Celsius for 10 minutes. Line a baking tray with parchment paper.
  6. Take out the refrigerated dough and cut into 1/2 inch thickness. Arrange the cut dough on the tray with at least 2 inch gap between each cut dough (while baking the dough spreads).
  7. Bake them at 180 Celsius for 20 - 25 minutes. Change the sides of the baking tray while baking, i.e. for the first 10 minutes, the tray will be in the same position when you start baking.
  8. The next ten minutes, take the tray out quickly and put the side that was facing the oven door to the inside of the over and vice versa. Skip this step if your oven is convection oven.
  9. Take out the biscuits once they start to brown from the bottom.
