ABOUT Dhingri Batata Vada/Mushroom Potato Fritter in Appe Pan RECIPE

Batata vada is quite a popular street food which is quite known for their deep fried outer layer with a delicious potato masala inside. I have made my own twist by adding finely chopped mushrooms to the usual potato masala to dish out some ultimate Mushroom potato fritters. And i opted for Appe pan aka Paniyaram pan just to avoid deep frying.

Ingredients Serving: 4

  1. 2 Potatoes (cooked & mashed)
  2. 1/2cup Mushrooms (cleaned & chopped)
  3. 1 Onion (chopped finely)
  4. 3nos Green chillies (chopped)
  5. 1tsp Ginger (grated)
  6. 1/4tsp Mustard seeds
  7. 1/4tsp Cumin seeds
  8. Chopped coriander leaves
  9. Salt
  10. Oil
  11. For Batter:
  12. 1/2cup Gram flour
  13. 1/4cup Rice flour
  14. 1/2tsp Baking powder
  15. 1/2tsp Ginger garlic paste
  16. 1/4tsp Turmeric powder
  17. 1/2tsp Chilly powder
  18. Salt
  19. Oil for pan frying

Instructions

  1. Heat enough oil,let crack the mustard seeds, cumin seeds.
  2. Immediately add the chopped onions, grated ginger and chopped green chillies,sauté everything for few minutes until the onions turns transculent.
  3. Add the chopped mushrooms and cook until they shrinks a bit.
  4. Now add the cooked and mashed potatoes with salt to the cooking veggies,cook for few minutes.
  5. Finally add the coriander leaves and put off the stove.
  6. Heat the appe pan/paniyaram pan with enough oil.
  7. Take all the ingredients give for batter in a bowl, add enough water and turn as a thick batter.
  8. Make small balls from the prepared potato-mushroom mixture, dip gently in the batter.
  9. Drop gently to the hot appe pan, cook in simmer.
  10. Flip the vadas and cook on both sides until they gets well cooked.
  11. Serve with spicy chutneys or sauces.
