ABOUT Special Lentil Noodle Soup RECIPE

This red lentil soup with chick peas is little different from regular creamy lentil soup. A pefect filling refreshing soup for the winter.

Ingredients Serving: 2

  1. 1/2 cup boiled Chick peas
  2. 1/2 cup soaked whole red Lentil
  3. 1 cup roughly chopped spinach, coriander and mint leaves
  4. 1 medium sized Onion chopped
  5. 1 medium sized Onion thinly sliced to caramelize
  6. 3-4 pods of crushed Garlic
  7. 2 tablespoon Olive oil
  8. 1 chopped green Chilli
  9. 100 grams Noodles of any variety
  10. 2 tablespoon butter
  11. 2 glass Vegetable stock/water
  12. 1 pinch Turmeric powder
  13. Salt to taste
  14. Sour cream to garnish
  15. Some bread pieces of any variety to accompany

Instructions

  1. In a saucepan heat olive oil and saute chopped onions until soft.
  2. Add crushed garlic and saute for 1 more minute.
  3. Add turmeric powder and chopped green chilli.
  4. Add soaked lentils and boiled chick peas.
  5. Pour vegetable stock or hot water.
  6. Add salt , cover and cook for about 1/2 an hour or until lentils cook completely.
  7. In the meantime heat butter in a pan and fry the thinly sliced onions until they are golden brown and crisp.
  8. Drain excess oil and keep aside.
  9. In the same pan toast some bread pieces with the leftover onion Flavoured butter.
  10. Keep aside.
  11. When lentil cooks completely(not mushy) , add noodles and chopped herbs.
  12. Cook till noodles become soft.
  13. Adjust seasoning according to your taste and remove from heat.
  14. Serve this very healthy and refreshing soup with caramelize onions and a dalop of sour cream.
  15. Serve also toasted bread as accompaniment.
