Wash and blanch cauliflower florets with a little salt for 5 to 6 mins
Make a paste of onion, ginger and garlic and green chilli
Make another paste of curd and peeled almonds
Heat 1 tablespoon oil and 1teaspoon clarified butter in a wok
Shallow fry the cauliflower florets
Add the rest oil
Add cumin seeds, crushed whole garam masala and bay leaf
Saute for few secs then add onion paste
Fry till oil seperates then add green peas
Add sugar, salt and kashmiri red chilli powder and mix well
Add the curd and almond paste and keep stirring
Add the sauteed florets and mix well
Add a little water and cover and cook for about 15 mins in medium flame stirring in between
Adjust consistency and top it with the remaining clarified butter
Garnish with fresh tomato and green chillies
