Kulcha is one of the commonly used flat breads in northern india. Stuffed kulcha can be made in other way too by putting the filling directly inside . But this time i made plain kulcha separately and then sandwiched the filling in between.
Add flour,baking powder, baking soda,sugar and salt to a bowl.
Make a well in between and put oil ,curd and water.
Make a dough from this ,add more water if required.
Cover this with a damp cloth and keep aside for 2 hours at least.
To make filling,heat oil in a wok.
Add chopped onion and saute till translucent.
Add Ginger garlic paste and chopped green chillies and saute for a min .
Add all chopped vegetables and saute well.
Add chopped tomato and saute till soft.
Add salt and all dry spices and mix well.
Add grated paneer and saute for 1-2 mins then switch off the gas.
To make kulcha,take a medium size ball of dough and roll it out.
Heat a tawa and cook kulcha on it from one side.
Turn and cook from other side too.
Put some oil and cook from both sides.
Make all kulcha in similar manner.
To assemble,take a kulcha and put tomato sauce on one side.
Put paneer filling on it
Close it with another kulcha in form of sandwich.
Put some butter on tawa and cook the stuffed kulcha again on both sides.
Cut into triangles and serve hot.
