ABOUT Stuffed paneer kulcha RECIPE

Kulcha is one of the commonly used flat breads in northern india. Stuffed kulcha can be made in other way too by putting the filling directly inside . But this time i made plain kulcha separately and then sandwiched the filling in between.

Ingredients Serving: 2

  1. For the kulcha
  2. 1 cup flour
  3. 2 tbsp curd
  4. 1 tbsp sugar
  5. 1 tbsp oil
  6. 1/4 tsp baking powder
  7. Pinch baking soda
  8. 1/2 tsp salt
  9. 1/3 cup water + as required
  10. For the filling
  11. 1 tbsp oil
  12. 1 onion
  13. 1/2 tsp ginger garlic paste
  14. 1-2 green chillies
  15. 3/4 cup chopped vegetables ( carrot,beans, capsicum)
  16. 1/2 cup grated paneer
  17. Salt,to taste
  18. 1/2 tsp turmeric powder
  19. 1/2 tsp coriander powder
  20. 1/2 tsp red chilli powder
  21. 1/2 tsp garam masala powder
  22. 4 tbsp tomato sauce
  23. Butter,as required

Instructions

  1. Add flour,baking powder, baking soda,sugar and salt to a bowl.
  2. Make a well in between and put oil ,curd and water.
  3. Make a dough from this ,add more water if required.
  4. Cover this with a damp cloth and keep aside for 2 hours at least.
  5. To make filling,heat oil in a wok.
  6. Add chopped onion and saute till translucent.
  7. Add Ginger garlic paste and chopped green chillies and saute for a min .
  8. Add all chopped vegetables and saute well.
  9. Add chopped tomato and saute till soft.
  10. Add salt and all dry spices and mix well.
  11. Add grated paneer and saute for 1-2 mins then switch off the gas.
  12. To make kulcha,take a medium size ball of dough and roll it out.
  13. Heat a tawa and cook kulcha on it from one side.
  14. Turn and cook from other side too.
  15. Put some oil and cook from both sides.
  16. Make all kulcha in similar manner.
  17. To assemble,take a kulcha and put tomato sauce on one side.
  18. Put paneer filling on it
  19. Close it with another kulcha in form of sandwich.
  20. Put some butter on tawa and cook the stuffed kulcha again on both sides.
  21. Cut into triangles and serve hot.
