ABOUT Chinese Chicken Congee(chicken rice porridge) RECIPE

One of the easiest and most healthy meal, which can be eaten anytime of the day! A Chinese traditional breakfast recipe, enjoyed equally by all members in a family, even taken by infants. As it is very easy on the tummy, porridge is also often prepared and served during convalescence from illness. A warm bowl of congee, is easy to make and serves as a nutritious and hearty breakfast in winters.

Ingredients Serving: 6

  1. 2 cups short grain rice
  2. 10 cups of water
  3. 2 whole shredded chicken breast pieces(you may use thigh pieces if you like)
  4. 1 inch julienne ginger pieces
  5. 3 green onions finely chopped
  6. Salt to season
  7. crushed black pepper to season
  8. few drops of soy sauce
  9. few drops of fragrant sesame oil

Instructions

  1. Rinse the rice several times using a fine colander to begin with
  2. add the water needed to cook in a heavy bottom sauce pan to boil
  3. add the rinsed rice as the water is boiling
  4. once the water is on a roaring boil, reduce heat and add the chicken pieces
  5. now add the salt and pepper
  6. mix well and cook covered for atleast 30 minutes, as the porridge needs to thicken
  7. once thick enough, turn off the heat
  8. add the ginger pieces, and few drops of sesame oil. mix well
  9. transfer into serving bowls
  10. garnish with chopped green onions,few drops of soy sauce and a dash of pepper if needed
  11. serve immediately and enjoy!
