ABOUT Paniyaram/Appe RECIPE

Left over dosa batter is seasoned to taste and made into paniyaram for the next morning's breakfast.This one batter serves for dosa making, paniyaram and Pulpolgolam as well. Fermentation plays a vital role in bringing out deep colour and taste to the dishes.

Ingredients Serving: 10

  1. 1/3 cup : Urad dal
  2. 1 cup : Boiled or long grain rice
  3. 1/3 tea spoon : Methi seeds
  4. salt as needed
  5. 1/4 cup : Sooji or Upma rawa
  6. 1/4 cup : Chana dal
  7. 1 : onion chopped
  8. 1 spoon : Ginger chopped
  9. 2 spoons : Green chilli paste
  10. Pinch turmeric
  11. 2 spoons : Curry leaves chopped
  12. 1/4 cup : Coriander chopped
  13. For tadka : 1 spoon : oil
  14. 1/2 spoon : Mustard seeds
  15. 1/8 spoon : Hing

Instructions

  1. Wash urad dal , Rice , methi seeds and soak them separately for 6 hours.
  2. Discard the water it's soaked in and grind all of them into smooth batter adding fresh water.
  3. Keep it aside for 8 hours or overnight to ferment.
  4. Wash and soak the chana dal in water for one hour to double in size.
  5. Dry roast sooji until fragnant.
  6. Prepare the tadka using a spoon of oil, mustard seeds and Hing. Allow the seeds to pop and add it to the batter.
  7. Roughly Chop onions, curry leaves, Coriander,Ginger and add to the batter along with roasted sooji, Green chilli paste,turmeric and salt.
  8. Remove the water from Chana dal and add it to the batter.
  9. Mix everything well and prepare a thick batter.
  10. Heat a paniyaram pan with few drops of oil.
  11. Pour one spoon batter into each mould.
  12. Cook them by covering with a lid for few minutes on each side.
  13. Remove on a plate and serve with chutney of choice.
  14. You can prepare thick dosa with same batter too.
