Ingredients Serving: 2

  1. Potatoes - 4
  2. Wheat Flour - 1 Cup
  3. Rava - 1 tbsp
  4. Black chana - 1 cup
  5. Onion - 2
  6. Tomatoes. - 2
  7. Garam Masala powder - 1/2 tsp
  8. Chaat masala powder - 1/2 tsp
  9. Ginger - 1/2 inch stick
  10. Garlic - 4 cloves
  11. Green Chillies - 2
  12. Chana masala - 1 tsp
  13. Cumin powder - 1/2 tsp
  14. Coriander powder - 1 tsp
  15. Turmeric Powder - 1/4 Tsp
  16. Bay leaf - 1
  17. Mustard oil - 1/2 tbsp
  18. Salt - As required
  19. Oil for frying

Instructions

  1. In a large bowl, grate 2 boiled potatoes.
  2. Then add wheat flour and sooji.
  3. Suji helps to make poori crispy.
  4. Now add spices like chilli powder, garam masala powder, chaat masala and salt to taste.
  5. Add a tsp of oil and mix all well.
  6. Now slowly add water as required and prepare a stiff dough as you make for pooris.
  7. Divide the dough into small or medium pieces.
  8. Make small lemon sized balls between your palms.
  9. Roll the dough evenly into circles using rolling pin.
  10. When the oil is hot, add one poori and press with the spoon to puff up.
  11. Turn poori and fry till golden brown all over.
  12. Fry all pooris like this.
  13. Soak the dried black Gram in four cups overnight or for 8 hours.
  14. Peel and chop the potatoes into cubes.
  15. Chop the onion finely.
  16. Slit the green chilies vertically.
  17. Peel and wash the garlic cloves.
  18. Crush the ginger stick.
  19. Puree the tomatoes.
  20. Heat mustard oil in a pressure cooker.
  21. When the oil is hot, add bay leaf and garlic cloves.
  22. Cook till the garlic cloves are golden.
  23. Add slit green chilies, finely chopped onions and crushed ginger.
  24. Cook on medium heat till the onions turn a darker shade .
  25. Add the dry spice powders like turmeric powder, cumin powder, coriander powder, red chili powder, chana masala.
  26. Mix well and cook for another 5 minutes.
  27. Add tomato puree to the cooking onions and spices.
  28. Add salt to taste.
  29. Stir, continue to cook till the tomato puree takes on a darker color.
  30. Add potato cubes and kala chana to the pressure-cooker.
  31. Mix well and cook the potatoes and kala chana with the masala for 5 minutes.
  32. Add four cups of water and lock the pressure cooker lid.
  33. Cook on high heat till the first whistle, then lower the heat and cook for another 15 minutes.
  34. Take the pressure cooker off the heat, let it cool till the lid comes off without force.
  35. Bihari style aloo chana is ready to eat.
  36. Garnish with chopped onions, coriander and green chillies.
  37. Finally, serve aloo poori with black chana curry.
