Wash and soak basmati rice for 10 minutes.
Take a cooker. Heat oil and add mustard. When it splutters add urad dal, methi, green chillies and curry leaves and just fry.
Add rice and mix well.
Now add hot water just 2 inches above the rice level. Add salt. Adding hot water speeds up the process.
Pressure till 2 whistles.
Turn off the flame. Let the cooker cool down on its own.
Once cooled add grated coconut. Mix well and serve with any pickle of your choice.
