ABOUT Homemade Dessicated Coconut RECIPE

Coconut is considered very auspicious in Hindu mythology and is used in all festivals. In some parts of India coconut tree is considered as kalpataru. Kalpataru means wish fulfilling tree. Coconut tree is called kalpataru because of its multiple uses. Coconut tree has varied uses like it gives purest and natural water, its pulp is used for extracting milk, its husk is used for making coir, leaves from tree used for making houses and sheds. Nature has given us such a beautiful fruit but we at times unknowingly waste it. When we extract milk from the pulp we tend to throw away the residue. I always thought of using the pulp in some or other way. Four years back when we got our new micro wave I was trying out various kind of recipes and this recipe came into my mind. From that day I make my very own desiccated coconut at home. I can bet it can beat shop bought desiccated coconut .So my dear friends today I would be sharing my way of making desiccated coconut at home hope you all enjoy it.

Ingredients Serving: 10

  1. Pulp of 1 coconut after extracting milk.
  2. Microwave safe dish
  3. Aluminium foil

Instructions

  1. First line your tray with aluminium foil and spread the coconut pulp in the tray.
  2. Place the tray inside the microwave in convection mode for 200 degree c and toast the coconut for 10 minutes from both sides
  3. It will look like slightly toasted.Keep an eye on it. Stir in between.
  4. Remove when theres no moisture left in them.It totally depends upon your microwave and its temperature so please check in between.
  5. Remove it from microwave before light brown stage.
  6. After its well toasted sieve it well so that lumps are removed.
  7. After sieving cool it and store in an airtight container and use it as and when required.
  8. This can be used for making curries, sweets like dry gulab jamuns, coconut maccroons, coconut cup cakes and what not.
  9. This can be used till 3 months if stored properly i.e, the container in which your storing should be clean and this coconut powder shouldnt come in contact with water.
