ABOUT Tangy Rajma Maxican Pilaf RECIPE

This is fusion pilaf is best combination of indian and Mexican spices with veggies, rajama and rice. The tomatoes and ketchup gives tanginess in rice.

Ingredients Serving: 4

  1. Cooked basmati rice 1 bowl
  2. Chopped onions 1 cup
  3. Chopped garlic 1tbs
  4. Chopped ginger chilli 1tbs
  5. Chopped tomatoes 1 cup
  6. Oil 2 tbs
  7. Olive oil 2 tbs
  8. Salt
  9. Chopped carrots 1/2 cup
  10. Chopped franch beans 1/4 cup
  11. Chopped capsicum 1/4 cup
  12. Boiled Simla rajma 1 cup
  13. Red chilli powder 2 tsp
  14. Turmeric 1/2 tsp
  15. Dhanya jeera powder 1 tsp
  16. Red chilli flex 2tsp
  17. Mixed herbs 1tsp
  18. Oregano 1 tsp
  19. Black Olives 1/4 cup
  20. Coriander

Instructions

  1. Take a pan heat the oil. Add chopped onions, ginger, garlic and chilli. Cook for 3 to 4 minutes or until soft and fragrant.
  2. Add french Bean, carrots, capscicum, boiled rajma cook for 5 minutes.
  3. Add chopped tomatoes and 1 cup of water. Cover the pan with lid and cook the veggies do not over cook.
  4. Add spices like red chilli powder, dhanya jeera powder, turmeric, mixed herbs, red chilli flex and oregano and salt as per taste.
  5. Add tomatoes ketchup.
  6. Add boiled soya nuggets.
  7. Add boiled rice
  8. Mixed all ingredients well. Cook for 2 to 3 minutes.
  9. Add 2 tbs Olive oil for taste.
  10. Add coriander and black olives for decoration.
  11. Fusion mexican rajma pilaf is ready to serve. Serve with cucumber and carrots salad and tomatoes ketchup.
