**ingrdients for buns**
Plain flour - 4 cups
Instant Yeast - 1 tbsp
Oil - 4 tbsp
Egg - 1
Salt - as needed
Caster sugar - 2 tsp
Baking Powder - 1/4 tsp
Warm milk - as needed (approx 1 & 1/2 cup)
**ingredients for filling**
Chicken mince - 500gm
Onion - 1 (finely chopped)
Chopped garlic - 1 tbsp
Chopped green chilli - 1 tsp
Carrot (thinly sliced) - 1/4 cup (optional)
zucchini (thinly sliced) - 1/4 cup (optional)
Red chili powder - 1/2 tsp
Cumin powder - 1 tsp
Salt - as needed
Turmeric powder - 1/2 tsp
Spring onions (chopped) - little bit (optional)
Boiled potato - 1 (small)
Oil - 2 tbsp
**ingredients for toppings**
Egg - 1 (for glazing)
Milk - 1 tsp
Melted Butter - 2 tbsp
Sesame seeds or poppy seeds - 1 tbsp (optional)
Instructions
**Making the bun dough**
Place the flour, salt, sugar, baking powder and yeast in a bowl and mix together.
Add oil and an egg and mix well.
Knead to a medium soft dough with warm milk.
Brush the inside of a bowl with melted butter or oil.
Place the dough inside the bowl Close the lid or cover slightly with a damp cloth in a warm place for 1-2 hours to ferment. **in cold weather time will might take bit long.**
**making the filling**
Put the chicken mince into a heat proof bowl and place the bowl in the microwave for 3 minutes on high speed.
Flip over the chicken and again on high speed place the bowl for 3 minutes.
Chicken should be cooked by that time. **depending on microwave if it's not cooked, place for bit long time.**
Add 2 tbsp oil into a frying pan and place on medium heat.
Add onion, garlic and green chilli and saute for a minute.
Add carrots and stir fried.
Add zucchini and stir fried.
Add cumin powder, red chilli powder, Salt and turmeric powder and saute for 1-2 minutes.
Then add chicken mince and mix well and cook for another minute.
Add mashed boiled potato and mix well.
Add spring onions and put the flame off.
**making the rose shape**
Meantime dough should be double in size.
Slightly knead the dough once and divide the dough into 18-20 sections and shape them into balls.
Roll out each ball to about 4" diameter and brush a bit of melted butter.
Make four diagonal slits, leaving the centre intact.
Add the filling in the centre.
Take one of the sections and cover the side of the filling with it.
Take the opposite side's section and cover the other side of the filling with it.
Repeat with the two last sections and pinch the dough on the side to seal it.
Preheat the oven to 180 degree celsius temperature.
Place a baking paper onto the baking tray.
When you making the other buns, put the finished buns into the tray and cover with a tea towel.
Break an egg and separate. Lightly whisk the egg yolk with a tsp of milk.
Gently brush the rose buns with egg yolk and sprinkle with sesame seeds or poppy seeds and put some grated cheese on top.
Bake for 15-20 minutes or till tops are golden.
Remove from oven and brush with melted butter.
Keep them covered until time of serving, so they stay soft.
