Bitter gourd - 200 gms ( slice them fine...remove seeds and soak in butter milk to leave away bitterness )
Onion - 1 large sliced fine
Tomato - 1 large sliced fine
Gram dal - 1 tsp
Mustard - 1 tsp
Curry leaves - 1 hand full ( cleaned and washed)
Coriander - 2 tbsp ( cleaned ,washed and chopped fine)
Chilli powder - 1 tbsp
Turmeric powder - 1/4 tbsp
Dhaniya powder - 1 1/2 tbsp
Jaggery - 1 1/2 tbsp ( powdered)
Tamarind juice - 1 tbsp ( thick)
Salt required
Oil - 3 tbsp
Instructions
Use the appropriate amount mentioned for yummy taste.
Heat a kadai with oil mentioned, then temper mustard.Let splutter.Add gram dal, when there colour turns slight brown add curry leaves, then add onion saute till transparent.Then add tomato to cook till gets soft.
Wash off bitter gourd soaked in butter milk and add these to the kadai, keep sauting for 2-3 minutes.The colour of bitter gourd will change slightly.
By this time add 1/2 tumbler of water and chilli powder, dhaniya powder, turmeric powder,tamarind juice, jaggery....leave it in slow flame.Bitter gourd will get cooked in it.
When the water reduces to about just 1 tbsp, keep stirring to avoid getting burnt.Now again cook well, it will become a gravy, add coriander and remove from flame.
Now mix with white rice and it also tastes yummy with rasam rice or curd rice.
Its soo sooo tasty..

lovely tip of soaking the karela in buttermilk..never heard of this before
