ABOUT Anjeer-Khajoor Chakra | Figs Dates & Nuts Roll RECIPE

My grandfather has an insatiable sweet tooth. Whenever he craves for something sweet, my grandmother makes these rolls for him. This is one of my favorite recipes I learnt from my grandmother as it is easy, quick, diabetic-friendly, sugar free, tasty and loaded with nutrition value. It makes a perfect snack or dessert which one can enjoy any time of day or a detectable sweet for festivals!

Ingredients Serving: 10

  1. 1 cup medjool dates, pitted and chopped roughly
  2. 1/8 cup dried figs, chopped
  3. 1/8 cup cashew nuts, chopped
  4. 1/8 cup almonds, chopped
  5. 1/8 cup pistachios, chopped
  6. 1 tbsp ghee

Instructions

  1. Dry roast the chopped nuts individually on medium heat till they are warm. Set aside.
  2. Heat ghee in a wok and add the chopped dates and figs.
  3. Turn the heat to low and with the help of a big flat spatula (preferably wooden) beat the contents and turn them around. This will take 4-5 minutes.
  4. Add all the roasted nuts.
  5. Now hold the wok tightly with a pair of tongs or cloth and with your working hand try to get all of them to stick and mix together.
  6. Keep beating it and mixing it, till one big brown nutty amalgam is formed. This takes about 5-6 minutes.
  7. Switch the flame off. Set the mixture aside to cool for a couple of minutes.
  8. Although still hot, use some ghee to grease your palm.
  9. Transfer the mixture onto a cling wrap.
  10. Mold the mixture into a ball. Squeeze out the air bubbles.
  11. Shape the mixture into a log. Make sure the log is tight and free of air bubbles.
  12. Refrigerate the log for 30 minutes or an hour.
  13. Once done, remove from the refrigerator and slice them with a sharpened knife to make rounds.
  14. Enjoy with a glass of milk or devour them as it is.
