ABOUT Savory Tomato Cookies with Cream Cheese RECIPE
A selection of savoury, buttery biscuits is just what's needed at your next party. Bake easy whole wheat flour cookies infused with oven roasted tomatoes and serve with cream cheese.

For cream cheese:
2 cups milk
1 tablespoon lemon juice
1/2 teaspoon salt
For cookies:
4-5 tomatoes
1 teaspoon oil
1/2 teaspoon sugar
1 cup whole wheat flour
Salt (to taste)
1/2 teaspoon red chilli powder
2 tablespoon grated cheese
50 gms butter (cut in cubes)
Cold water (for kneading the dough)
For garnishing :
Mint leaves
Few tomato pieces
Instructions
For making cream cheese, boil milk and add lemon juice. Stir till solids gets separated from whey.
Separate milk solids from whey and let it sit for 5 minutes.
Take a mixer. Add separated milk solids. Add 1/2 teaspoon salt. Grind well till it gets creamy. Cream cheese is ready. You can add few drops of water if it is too thick to grind.
For making cookies, firstly we have to roast tomatoes.
Cut the tomatoes in four parts. Scoop out the pulp.
Sprinkle oil, salt and sugar on tomatoes.
Roast them in oven @150°C for 40 minutes.
Chop them finely.
In a bowl, add whole wheat flour, chopped roasted tomatoes, grated cheese, salt, red chilli powder and butter.
Mix well and make a crumbly mixture.
Add cold water and make a hard dough. Due to butter dough may break but don't add more water to bind it. Instead grease your hands and bind it in dough.
Roll the dough and cut the dough in round shape using cutter.
Preheat the oven @170°C. Grease the baking tray. Put cookies on it.
Bake for 10-12 minutes @ 170°C.
Let them cool completely.
Fill cream cheese in piping bag. Pour the cream cheese over cookies.
Garnish with mint leaves and tomato slices.
