ABOUT Tomato Shorba Shooters with Cheesy Croutons RECIPE

Tomato shorba is a good appetizer and aids in digestion process. Shorba is a delicious variety of soup that was popular among Mughals.

Ingredients Serving: 4

  1. For Tomato Shorba:
  2. 1 tablespoon coriander leaves
  3. 1 tablespoon besan
  4. 2-3 garlic cloves
  5. 1 inch ginger pc
  6. 1 teaspoon ghee
  7. 1 teaspoon cumin seeds
  8. 5-6 black peppercorns
  9. 1 inch pc cinnamon
  10. 1 bayleaf
  11. 1 black cardamom
  12. Salt (to taste)
  13. 1/2 teaspoon coriander powder
  14. 1 Cup water
  15. Cream (for garnishing)
  16. For Cheesy Croutons :
  17. 2 bread slices
  18. 1 tablespoon mozzarella cheese (grated)
  19. Ghee (for brushing)

Instructions

  1. For making Croutons, take a bread slice. Put cheese over it. Cover with another slice. Cut in cubes. Brush with ghee. Bake with @180 °C for 10 minutes.
  2. For making Shorba, heat a pressure cooker. Add ghee. Add cumin seeds, peppercorns,black cardamom, bayleaf and cinnamon piece.
  3. Add chopped ginger and garlic. Saute. Add besan and coriander leaves. Roast till besan turns slightly brown. Add chopped tomatoes and add water. Add salt and coriander powder. Add water and pressure cook for around 3-4 whistles .
  4. When pressure gets released, blend using blender and sieve.
  5. Serve in shot glasses and garnish with cream. Serve with Croutons
