Tangy spicy Tomatoe Quinoa

ABOUT Tangy spicy Tomatoe Quinoa RECIPE

Just like the humble tomatoe rice from the south here I've made it with quinova with a nice spicy twist. Do try as it's an easy one pot preparation. You'll love to make it anytime. In breakfast, lunch or dinner. Healthy and yummy at the same time.

Ingredients Serving: 2

  1. Quinoa 1 cup
  2. Water 2 cups
  3. Tomatoe 3 large
  4. Onion 2 medium
  5. Garlic 5 to 6 cloves
  6. Spices :
  7. Red chilli powder 1/2 tsp
  8. Turmeric 1/2 tsp
  9. Sambar masala powder 1 tbsp
  10. Seeds of 2 cardamon
  11. Salt to taste
  12. Green peas 1/4 cup(optional)
  13. Coriander 3 tbsp
  14. Oil 2 tsp
  15. Ghee 1 tbsp

Instructions

  1. Chop the onion, tomatoe and garlic. Keep ready
  2. Take a pressure cooker. Heat oil. Add the chopped garlic, saute few seconds till lightly browned.
  3. Add the onion and saute till transperant
  4. Now add the tomatoes and spice powders. Add salt. Cover and cook till mushy. Add green peas.
  5. Add the seeds of the cardamon. Mix well. Add the washed quinoa.
  6. Add water. Cover and cook for 4 to 5 whistles. Switch off the gas.
  7. Let the pressure cool completely.
  8. Open and add some chopped coriander and the ghee.
  9. Mix well. Serve garnished with some more Coriander.
