Ingredients Serving: 4
Salt as per taste
2 tablespoon oil + more oil for shallow frying
1/2 cup soya granules
2 potatoes boiled and grated
1/4 cup green peas blanched and crushed
1/4 cup grated carrots
1 Tablespoon chopped garlic
1/2 tablespoon chopped Ginger
1 medium onion finely chopped
2 tablespoon green coriander finely chopped
2 green chillies finely chopped
1/4 teaspoon turmeric powder
1 teaspoon kashmiri chilli powder
1 teaspoon garam masala powder
1 teaspoon chaat masala
1/2 tsp cumin seeds
a pinch of Hing
1 teaspoon dhana jeera powder
1/2 Teaspoon Sugar
Juice of 1 lemon
1 cup fine breadcrumbs
Instructions
Soak soya granules in warm water for 10 minutes. Squeeze excess water and transfer to a large mixing bowl.
In a non stick pan take 2 tablespoons of oil. Add cumin seeds, hing. When cumin crackles, add onion, green chillies, garlic & ginger. Saute for 1-2 minutes on high flame.
Now add turmeric powder, red chilli powder, dhana-jeera powder, garam masala, salt & mix well.
To this fried masala add the grated potatoes, green peas, carrot and saute on high flame for 2 minutes.
Transfer the potato mixture to the mixing bowl containing the soya granules.
Add chaat masala, lemon juice, sugar and chopped coriander leaves. Mix all ingredients well.
At this point...if the mix is too moist, add 1/2 cup fine bread crumbs and adjust seasoning accordingly.
Shape the mixture into flat roundels or to desired cutlet shape. Lightly brush the patties with water, coat well in breadcrumbs and keep aside.
Repeat for rest of the mixture & keep all the patties ready to be shallow fried.
Hear 4-5 tablespoon oil in a non stick pan & shallow fry the cutlets till crisp n golden brown from both sides.
Serve hot with mind chutney & ketchup.
