Pasta stuffed Zucchini boats are healthy and fresh dinner option to enjoy the evening .These boats are piled up with boiled fussili pasta infused with loads of veggies and cheese having Italian herbs flavours.This customizable meal would please all age groups.

Ingredients Serving: 4

  1. Zucchini 2
  2. Fussili pasta 200 g
  3. Green onions 2
  4. Garlic flakes 6
  5. Mozzarella cheese 50 mg
  6. Butter 30 mg
  7. Capsicum 1
  8. Bell pepper red 1
  9. Bell pepper yellow 1
  10. Frozen precooked corn 20g
  11. Frozen peas 20g
  12. Olive oil 2 tablespoon
  13. Marinara sauce.2 tablespoon
  14. Cherry tomatoes 10
  15. salt as per taste
  16. Oregano 20g
  17. Red paprika flakes 20g

Instructions

  1. Wash and cut all 2 zucchini lengthwise into two halves .
  2. Now scoop out the pulp by using a sharp teaspoon . The pulp would be used along with the chopped veggies while shallow frying the veggies.
  3. Keep this aside..Mean while boil the fussili pasta by adding little oil to avoid adhering of the pasta.
  4. Drain out the water once the pasta becomes tender under cold running water in a colander.Now keep this aside.
  5. Now shallow fry all the veggies in a pan including the zucchini pulp pieces.
  6. Add marinara sauce .
  7. Add salt , herbs , cheese and pre boiled pasta and mix it thoroughly.
  8. Next step is now to grease the zucchini hollow boats with the butter and fill it with the pasta filling.
  9. Keep the dish in the microwave for 6 minutes under ordinary microwave mode of power 1000watts, to make the zucchini tender and also this process lets the cheese melt.
  10. After 6 minutes take the pasta boats out . Now shallow fry a little on a non sticking tawa to give it a crispy effect.
  11. Now our fussili filled zucchini boats are ready..Arrange them on the plate and serve them.
  12. Enjoy this innovative healthy pasta in a different italian style .
