ABOUT Whole Lentil Soup with Spaghetti RECIPE

This lentil soup with spaghetti is a delicious, refreshing soup flavored with fres herbs and crisp onion. Whole lentils will provide you enough protein and together with pasta or spaghetti, this special soup is very filling also. You can serve this soup during breakfast or even serve for lunch also.

Ingredients Serving: 3

  1. Boiled Chick Peas 1/2 cup
  2. Whole Red Lentil 1/2 cup (soaked overnight)
  3. Spaghetti 100 grams
  4. Onions 2 big
  5. Spinach roughly chopped 1 cup
  6. Coriander leaves roughly chopped 1/3rd cup
  7. Mint leaves roughly chopped 1/3rd cup
  8. Garlic pods 3-4 crushed
  9. Green chilli chopped 1
  10. Olive oil 2 tablespoon
  11. Butter 2 tablespoon
  12. Vegetable stock/Water 2 glass
  13. Salt to taste
  14. Crushed Black Pepper 1/2 teaspoon
  15. Sour cream 2-3 tablespoon
  16. Some bread sliced of your choice

Instructions

  1. Chop 1 onion into small pieces and slice another onion into thin pieces.
  2. Heat a saucepan with olive oil and saute chopped onion for a minute.
  3. Add chopped garlic and saute for few seconds.
  4. Add turmeric powder and mix.
  5. Next add soaked red whole lentil, boiled chick peas and chopped green chilli. Give a good mix.
  6. Pour hot vegetable stock or water.
  7. Add salt and simmer for about 1/2 an hour to cook lentils completely.
  8. In the meantime heat butter in a pan and start frying thinly sliced onion
  9. Fry till onions become golden brown and crisp.
  10. Transfer the crisp onion in a paper towel.
  11. In the same pan toast some bread slices with the leftover onion flavoured butter.
  12. Keep aside.
  13. When lentils cooks completely slide the spaghetti in the hot soup.
  14. When the spaghetti becomes soft add the chopped herbs.
  15. Cook for another 5 minutes.
  16. Before removing sprinkle 1/2 teaspoon black pepper, check the seasoning . Ad salt if necessary.
  17. Transfer the soup into serving bowls, top with some sour cream and brown onion.
  18. Serve with toasted bread slices.
