ABOUT Pasta Primavera RECIPE

This Pasta Primavera is full of spring vegetables. This is the perfect combination of vegetables. The flavors all compliment one another.

Ingredients Serving: 4

  1. Uncooked Penne pasta 250 gms
  2. Extra virgin olive oil 2Tbsp +2 Tbsp
  3. Red onion thinly sliced 1/2 cup
  4. Asparagus, trimmed and cut into 2-inch pieces 1/2
  5. Frozen peas 1/2cup
  6. Cherry tomatoes, halved 1/2 cup
  7. Garlic cloves, minced 4-6
  8. Fresh Lemon juice 1 1/2 tsp
  9. Freshly grated parmesan cheese. 1/4cup
  10. Salt to taste
  11. Freshly ground black pepper to taste
  12. Finely chopped coriander 1 1/2 Tbsp

Instructions

  1. Add 4-6 cups of water to a large pan and boil over high heat.
  2. Cook pasta in boiling water until the pasta has cooked through almost 8-9 minutes.
  3. Heat 2 tablespoons olive oil in a large wide pan over medium-high heat. 
  4. Add sliced onion and asparagus and saute for 5 to 7 minutes until asparagus is tender and crisp.
  5. Add in peas, tomatoes, and cook for , 1 to 2 minutes.
  6. Add minced garlic and cook 1 minute more. Remove the pan from heat.
  7. Add cooked pasta to the pan and toss with 2 tablespoons of olive oil, lemon juice, and parmesan until cheese is melted. 
  8. Add salt and black pepper to taste.
  9. Garnish with freshly chopped coriander leaves and serve hot.
