ABOUT Mint Pesto Fusilli Pasta RECIPE

This mint pesto sauce is made with mint leaves in lieu of traditional basil leaves.

Ingredients Serving: 2

  1. Fusilli Pasta - 250 grams (~ 1 cup)
  2. Cherry tomatoes - 1/2 cup
  3. Olive oil - 1 teaspoon
  4. Salt - 1 tablespoon
  5. Water - 1 litre (~ 4 cups)
  6. Mint leaves - 2 cups
  7. Coriander leaves / Cilantro  - 1/2 cup
  8. Garlic cloves - 3
  9. Olive oil - 1/3 cup
  10. Almonds (soaked and skin off) - 1/2 cup
  11. Salt - 1/2 tablespoon (as per taste)
  12. Black peppercorns - 1/2 teaspoon (as per spice level)
  13. Lemon juice - 1 tablespoon
  14. Cheese - 1/4 cup

Instructions

  1. Soak almonds for 4 hrs or overnight. Once soaked, drain and peel the skin off.
  2. Rinse mint leaves and cilantro (coriander leaves).
  3. In the blender, add mint leaves, cilantro, soaked almonds, black peppercorns, garlic cloves, lemon juice and salt. Grind to a coarse paste. Pour olive oil to the ground paste and pulse for a few seconds or till fine paste.
  4. In large crockpot, pour 1 litre (~ 4 cups) of water and bring it to a slight boil. When water boils, add a teaspoon of salt and olive oil. Stir them to dissolve. Add pasta of your choice, here I used fusilli pasta. Stir pasta to avoid stick
  5. Cook till pasta becomes tender or until the time mentioned in the package.
  6. Once cooked, drain pasta with strainer and run it over cold water to stop cooking further.
  7. In a large mixing bowl, add cooked pasta and mint pesto sauce. Mix them until well combined.
  8. Heat a large frying pan with a teaspoon of olive oil. Coat the pan with oil and add the mint pesto pasta.
  9. Cook pasta for 5 minutes on simmer with lid on.
  10. Halve the cherry tomatoes and toss them into the pasta.
  11. Grate mozzarella cheese on top.
  12. Cook covered for 2-3 minutes on simmer or until cheese melts.
  13. Turn off the stove.
  14. Serve warm with a good grating of cheese.
