ABOUT Spinach corn sabji RECIPE

Spinach corn is one of my favourite recipe. It's lightly spiced, nutritious, smooth, and has a creamy texture. One thing is good that it is a very simple recipe. It's easy to make and easy to eat!

Ingredients Serving: 4

  1. Spinach 1 bunch 
  2. Sweet corn 1 cup
  3. Onion 1 big
  4. Tomato 1 big 
  5. Green chilli 2-3
  6. Ginger 1 inch 
  7. Garlic 7-8 cloves
  8. Cumin seeds 1 tablespoon
  9. Garam masala 1 teaspoon
  10. Kasuri methi 1 tablespoon
  11. Salt as per taste
  12. Red chilli powder 1 teaspoon
  13. Coriander powder 1 teaspoon
  14. Turmeric 1/4 teaspoon
  15. Oil/ghee/butter 1 and 1/2 tablespoon
  16. Water as required
  17. Amul fresh cream 2 tablespoon
  18. Cashew nuts 12-15

Instructions

  1. Rinse the spinach very well in water. Boil water with some salt. Let the water come to a boil and then add spinach. Boil for one minute and switch of the flame.
  2. Now drain all the water, cool, and make puree and keep aside.
  3. Steam corn in a steamer or pressure cook. Let the cooker whistle twice and let it simmer for 2 minutes and then switch off the flame and keep aside.
  4. In a blender jar, add onion, tomato, garlic, ginger, green chilli, cumin seeds,cashew nuts and make a smooth paste.
  5. Heat oil/ghee/butter in a pan. Add onion paste and saute for 8 to 10 minutes or until oil comes out.
  6. Add spinach puree and saute for a minute. Add all the spices and mix it well. Also, add some water.
  7. Then add corn and cream. Mix properly and cook for 10 minutes in low flame.
  8. Lastly, add kasuri methi.
  9. If you don't have cream, then you can add cornflour+milk paste, and also add some milk.
  10.  You can add whole spices also.
