Ingredients Serving: 4

  1. 1 bunch spinach leaves
  2. 1 cup boiled corn
  3. 2 onions chopped
  4. 2 tomatoes pureed
  5. 1 tsp ginger garlic paste
  6. 1 green chili slit
  7. Salt to taste
  8. 1/4 tsp Cumin seeds
  9. 1/4 tsp red chili powder
  10. 1/4 tsp garam masala
  11. 2 tbsp oil
  12. 1 tsp fresh malai for garnishing

Instructions

  1. Blanch spinach leaves and puree it
  2. Heat oil in a pan and splutter cumin seeds
  3. Add chopped onion and saute until translucent
  4. Add ginger garlic paste and saute until raw aroma goes away
  5. Add tomato puree, cook until oil starts leaving sides
  6. Add salt and spice powders. Mix well
  7. Now add spinach puree and cook for 3-4 minutes
  8. Add boiled corn and stir well. cook for 5 minutes
  9. Garnish with fresh malai. Serve hot with roti or naan
