I was having few Sooji rusks which had gone little soggy too and so one day i thought of making its shahi tukda and trust me it came out to be really delicious and healthy.

Ingredients Serving: 4

  1. Sooji rusk 4 ( left over )
  2. Sugar powdered 2 tablespoon
  3. Full cream milk 1000 ml
  4. Cardamom powder 1 teaspoon
  5. Cinnamon powder 1/2 teaspoon
  6. Pistachios slit vertically 10 g
  7. Almonds slit vertically 10g
  8. Strawberries frozen 4-5 for garnishing.

Instructions

  1. These were the sooji rusks which were left to be discarded almost..
  2. Preparation for the rabri .. In a non sticking pan add full cream milk on a medium flame .
  3. Keep on stirring till the milk remains one fourth of the original . Add powdered sugar , cardamom and cinnamon powder . Now in a tray arrange these rusks and pour the rabri over it .Allow the rusks to absorb the milk in the rabri .
  4. Your healthy shahi tukra is ready instantly .No deep frying of bread here . Moreover my left over rusks were also being used .Infact into a very sweet dessert. Arrange them in a tray and garnish them with dry fruits and strawberries.
