Kheera manda is a very famous & delicious pitha of Odisha.I have stuffed it with left over sandesh.The combination comes out too good.

Ingredients Serving: 5

  1. Rice flour...1cup
  2. Salt a pinch
  3. Ghee...1tspn
  4. Sugar...1cup
  5. Left over sandesh...5 pieces
  6. Milk...1ltr
  7. Chopped raisine & cashew nuts...1/2cup
  8. Cardamom powder...1/2teaspn

Instructions

  1. Take 4 to 5 pieces big size sandesh & crush them.
  2. Heat 1/2teaspn ghee,add crushed sandesh & cook it for 2 to 3 minutes.
  3. Heat water with salt, ghee & 2tspn sugar.When it will start to boil, add rice flour.Stir it constantly & make a smooth dough of it.Allow it to cool for few minutes.
  4. Now take some portion from the dough, make a ball, put some sandesh mixture in it & wrap it well.
  5. Now boil milk to make rabdi.Add sugar, a pinch of salt, cardamom powder, raisin & cashew nuts.When the mixture became thick, add stuffed rice balls.
  6. Boil it in low flame for 10 more minutes.
  7. Make it cool & serve chilled.
