ABOUT Leftover Shaami Kabab Wraps... RECIPE

An authentic kabab recipe from my beautiful city Hyderabad with it's melt in mouth texture. These leftover aromatic and flavourful kababs are used in wraps by me for a delicious breakfast or brunch. Kids will love them too. Add tomatoes,onions etc to your taste and enjoy these succulent kababs in a new style. Wraps and rolls make for the most versatile options and hence you just need your imagination to spruce up something exotic.

Ingredients Serving: 4

  1. FOR THE SHAAMI KABAABS ; 700 gms Mutton boneless
  2. 3/4 cup bengal gram
  3. 1 1/2 tbsp ginger garlic paste
  4. 1 tbsp salt
  5. 1 tbsp red chilli powder
  6. 1 tsp garam masala
  7. 1/2 tsp Turmeric
  8. 1/2 tsp cubeb pepper powder (kabab chini)
  9. 1/4 cup chopped coriander leaves
  10. 1/4 cup chopped mint leaves
  11. 1/4 cup tomato slices
  12. 1/4 cup cucumber slices
  13. 1 cup lettuce torn into big pieces
  14. 1/4 cup tomato ketchup for the spreading (optional)
  15. 6-8 Rotis or chapatis
  16. 8-10 leftover shaami kababs
  17. 2-3 green chillies
  18. 2-3 tbsp oil
  19. 1 onion chopped

Instructions

  1. Soak dal for an hour. Add all the ingredients including the dal to a pressure cooker. Pressure cook for 6-7 whistles with minimal water.
  2. Let the pressure settle down. Open the lid and cook until whatever water that is remaining dries up completely. Grind to a smooth paste.
  3. Form either round or oval shaped patties and shallow fry them on a low heat until done on both the sides.
  4. Shallow fry them in little oil before making the wraps just to reheat them.
  5. For assembling, use these leftover scrumptious kababs in these beautiful wraps along with your favourite additions like cucumbers, onions, tomatoes and lettuce. Enjoy!
