ABOUT Halwa with leftover chapati dough RECIPE

in our homes, there is always some extra dough lying in fridge. Rather than throwing it away, prepare this delicious halwa and enjoy. you can store this halwa for more than a week, no need to refrigerate too.

Ingredients Serving: 4

  1. 1/2 cup or 120 grams leftover chapati dough
  2. 2.5 cups water
  3. 3/4 cup sugar
  4. 3/4 cup ghee
  5. 1/2 tsp green cardamom powder
  6. 4-5 cashews chopped
  7. Few drops of orange food colour

Instructions

  1. place the dough in a bowl and add 2.5 cups water to it
  2. cover with a cloth and let it soak for 2 hours
  3. after 2 hours, take the dough with water and mix it well with your hands
  4. dough dissolves in water and you will get white colored milk
  5. squeeze out the chewing gum like part that comes from the wheat dough
  6. now strain the wheat milk through a strainer
  7. set the milk aside
  8. heat 1 tbsp ghee in a kadai and roast the cashews on medium flame
  9. after it turns golden brown, add the wheat milk and start stirring
  10. when it becomes slightly thick add 1/2 cup sugar and keep mixing
  11. in another pan heat 1 tbsp ghee and 1/4 cup sugar
  12. mix well and caramelize it
  13. switch off the flame and add the caramelized sugar to the halwa, keep mixing
  14. after the caramelized sugar is mixed well add 1 tbsp ghee and mix well
  15. ghee will be absorbed by the halwa
  16. again add 1 tbsp ghee and mix well
  17. continue this process at regular intervals
  18. halwa turns glossy and color of the halwa becomes darker as it cooks
  19. halwa will start to leave the sides
  20. keep adding ghee
  21. it will become soft and rotates with the ladle
  22. add cardamom powder and food colour, mix well
  23. at one stage, it will stop taking ghee and starts to ooze out the ghee
  24. collect the ghee that oozes out from the halwa in a bowl
  25. switch off the flame and transfer the halwa to a square container
  26. leave it for 1 hour
  27. then cut into square pieces
  28. serve or store in an air tight container
