ABOUT Chicken Chettinad RECIPE

Chicken Chettinad is a South Indian popular,authentic and traditional recipe which is very simple, easy to make. The recipe is prepare with some fresh ground mixture of spices and marinate the chicken for few minutes.

Ingredients Serving: 4

  1. 750 gram chicken with bone
  2. 3 tbsp oil
  3. 3 springs of curry leaves
  4. 4 medium size tomato nicely chopped
  5. 1 big size onion nicely chopped
  6. 2 bay leaves
  7. For Matination, 1/2 cup curd
  8. 1/4 tsp turmeric powder
  9. 1/2 tsp chilli powder
  10. 1 and 1/4 tsp garlic paste
  11. 3/4 tsp ginger paste
  12. Salt as per taste
  13. For Chettinad Masala, 1/2 cup grated coconut
  14. 1 and 1/2 tbsp poppy seeds
  15. 1/2 tbsp fennel seeds
  16. 1 and 1/4 tbsp corriender seeds
  17. 6 to 8 black peppercorn
  18. 1 tsp cumin seeds
  19. 6 to 8 whole red chilli
  20. 4 green cardamom
  21. 5 to 6 cloves
  22. 1 inch cinnamon stick

Instructions

  1. Take ginger and garlic paste, curd, turmeric and red chilli powder, salt and chicken, mix nicely and keep aside for marination
  2. Roast the corriender, red chilli, cumin, green cardamom,cloves,fennel nd black pepper corn and cinnamon till pleasant smell
  3. Now add poppy seeds and coconut until good smell, when done keep aside to cool
  4. When cool transfer in a blender jar add some water and make smooth paste of it
  5. Now heat oil in a pan add bay leaves and chopped onion and saute till onion translucent in colour
  6. Now add marinate chicken and stir for 4 to 5 minutes
  7. Now add nicely chopped tomato and cook till oil seprate
  8. Now add ground paste and curry leaves and again fry
  9. Now add some hot water as needed and cover it to cook
  10. When chicken pieces tender and cook ,then switch of gas
  11. Now serve the Chicken Chettinad hot for more taste with rice or chappati
