Ingredients Serving: 4

  1. Chicken- 800 gms
  2. Cinnamon- 1/2 inch stick
  3. Green cardamom- 3
  4. Cloves - 3
  5. Black pepper- 1/2 tsp
  6. Dry red chili - 4-5
  7. Cumin seeds- 1/2 tsp
  8. Coriander seeds- 1 tsp
  9. Fennel seeds- 2 tsp
  10. Coconut- 4 tbsp
  11. Curry leaves- 5-6
  12. Onion - 2 medium, chopped
  13. Ginger paste - 1 tsp
  14. Tomato - 1 chopped
  15. Garlic paste - 1 tbsp
  16. Green chili - 1-2
  17. Turmeric powder- 1/2 tsp
  18. Chili powder - 1/2 tsp

Instructions

  1. Heat a pan with 1 tsp oil .add cumin seeds,Coriander seeds, fennel seeds,Cinnamon,cardamom,cloves ,Black pepper and dry red chili ..
  2. Roast all spices till fragrant..then put all spices in a blender along with coconut and blend till smooth.
  3. Then heat the same pan with 3 tbsp of oil..add curry leaves.
  4. Then add chopped onion and saute till light brown.
  5. Then add ginger garlic paste and slit green chili...stir it for a minute.
  6. Now add chopped tomato and stir till tomato get soft ..
  7. Now add chicken,Turmeric powder and chilli powder..stir well
  8. Sprinkle some water..stir it for 4-5 mins or till oil leaves side of the pan..
  9. Then add salt to taste and blended roast spices..give a nice stir to mix well everything..
  10. Once the oil starts to leave ,add 1/2 cup water.
  11. Bring to bubble..Then turn down flame ,cover pan and cook chicken for 10-15 mins or till chicken cook through..
  12. When the chicken get tender .check seasoning..keep gravy as per your desire consistency..
  13. Ready chettinad chicken. Garnish with fried curry leaves... Serve it with rice or malabar parotta or whatever you like..
