ABOUT Aamras RECIPE

Aamras is a traditional dessert which is prepared using fresh, sweet and pulpy Mangoes. The pulp of a ripe mango is extracted, usually by hand, blended and is consumed together with puris or chapati. Sometimes Saffron strands, cardamom powder or milk are added to enhance the flavor of mango pulp or Aamras. It is popular in Rajasthan, Maharashtra, Gujarat and consumed as a dessert; prepared and being served in festivals or Marriages.

Ingredients Serving: 4

  1. Ripe Mangoes – 2 large sized (Preferably Alphonso or any sweet pulpy variety)
  2. Sugar – 2-3 tbsp (depending on the sweetness of mango pulp)
  3. Water – 1-2 tbsp.

Instructions

  1. Wash, pat dry, Peel and chop or dice the mangoes. Discard the stone.
  2. Transfer them in a blender. Add sugar. Blend until smooth puree.
  3. Add 1-2 tbsp water only if pulp is very thick. Blend it again.
  4. Pour it in a bowl and transfer it in the refrigerator. Chill.
