I have made a fusion of the snack with our Indian Gujiya.

Ingredients Serving: 5

  1. For the dough / crust :
  2. 1/2 cup of boiled and mashed potatoes
  3. 1 1/2 cup of all all purpose flour
  4. 1/2 tsp salt
  5. 1/2 tbsp oil
  6. 1/2 tsp baking powder
  7. Cold water 1/4 cup + 1/8 cup
  8. For Filling:
  9. 4 tsp ghee
  10. 2 cups of chopped yellow pumpkin
  11. 4-5 cardamom powdered
  12. 1 tbsp Sugar
  13. Few strands of kesar soaked in 2 tbsp warm milk
  14. Dried fruit and rose petals

Instructions

  1. In a bowl take mashed potatoes, salt and oil and beat it well. Now add all purpose flour, sooji and baking powder. Mix it thoroughly.
  2. Now use water little by little and prepare a dough. Cover it and let it rest for 30 minutes.
  3. In a small wok put ghee, cardamom powder and pumpkin. Give a stir and cover it with a lid. After 3-4 minutes remove the lid and add sugar and saffron. By that time the pumpkin should be soft.
  4. Give it a beat if needed so that it just appears like a pulp. If the pumpkin is still hard, add some water and cook for another few minutes. Add rose petals and remove from the flame. The filling is ready.
  5. Take a lemon sized ball from the dough and roll it thin. Cut 2 small rounds from it with help of a cookie cutter. Take 1 of the circular cut and place some filling over it.
  6. Cover it with another round shaped layer and slowly start pinching the sides in order to seal them properly.
  7. Wet your fingers with water while doing this. Repeat the process with rest of the dough. Line them on a baking sheet and bake in a preheated oven at 170 degree centigrade for 30-35 minutes or till golden brown. Brush them with butter once done. Drizzle some honey to garnish.
